TŌKA

A concept for an omakase house with twelve seats and one lamp, in London, Paris, Milan and Madrid. There is no menu, so the site sells the ritual: the counter, the season and the seat.

The idea
Omakase means “I leave it to you”: for two hours, the itamae decides everything. So the site explains the ritual instead of listing dishes: the fish chosen at dawn, the rice served at body temperature, each piece placed in the guest's hand the moment it is ready.
Four houses share one calendar, the seventy-two Japanese micro-seasons, and change on the same night. Each house has its own page; the journal and the house notes carry the season between visits.
Reserving is a letter to the house you choose: twelve seats, two sittings, Tuesday to Saturday. One lamp over a hinoki counter set the palette: paper, ink and one deep red.
